Meatless, a sizable collection of vegetarian recipes from the Martha Stewart Living team, offers us enticing full-color photos for each of the 200+ recipes. In fact, the whole book reeks of the signature Martha finesse that her followers have come to expect–sophistication and simplicity with a whiff of obsessive detail.

Aesthetics aside, what really made this veggie cookbook stand out for me was the variety and refinement of the dishes. The “Butternut Squash Lasagna” and “Soba Noodles and Tofu in Ginger Broth” were completely different flavor profiles, but both substantial enough for any carnivore or omnivore. Whatever your reasons for going meatless, be they health, budget, lifestyle or whim, Meatless makes skipping the meat an easy and exciting prospect.
